Making Chocolate Chip Cookies With a Spin









Putting a spin on your basic chocolate chip recipe. I have added orange zest to batter, to give it a unique flavor and that slight hint of orange.

Adding a real liquor rum to batter, of my! What raves and people can't get enough.

Add bits of cut up cherries, maraschino or black fresh cherries or dried cut up into tiny pieces. A tiny bit of cherry extract and wow!

I make and sell my cakes, cookies and specialty cupcakes to family and friends. So many ideas and so little time. I love to find the unique twist to something basic.

I have two pictures, the one is my rum chocolate chip cookie and the other, fresh blueberries cut up were added to batter and fold in not to die your cookies blue. They must be thoroughly dry with paper towel. They are moist and delicious.

I keep experimenting for the perfect chocolate chip cookie. So far by sampling on friends and family the rum is in first place.



I am getting ready to do some awesome fall bundt cakes and scones this week. Will let you know some awesome ideas and if I find a winner.

Cupcake Making







This has been a long week it seems. Busy baking and working on my card business too.










I am getting ready to make some impressive cupcakes for a family get together on sat. It is great to present something that wows people, it makes a baker feel so good.


I am trying to think of ways to make a basic white cupcake into some awesome flavors.

I will be doing a strawberry, blending fresh cut up strawberries into batter and also the icing. I am thinking end of summer, beginning of fall, what next.



I have an idea for a infused mango, using blended, steamed dried mango and cut up into tiny pieces and adding to cupcake batter, for cupcake. Then using a colored frosting the color of mango a light orange and using mango extract and putting a few tiny pieces of mango on the top to garnish.

A chocolate cupcake with a dipped top into chocolate ganache, and then frosted with a swirl light chocolate mocha frosting.




Present the beautiful cupcakes on a plate with a paper dollie. Make your cupcakes so inviting that people have a hard time choosing

Fall Baking



Labor day marks the end of summer, back to school and fall baking goodies.



I am working on a pumpkin spice cranberry scone with and orange cranberry drizzle.






Kids need to sometimes take goodies for class to share. You can easily make some cupcakes and if for fall or halloween, think toppers like bones, sprinkles in fall colors. I found alot of halloween toppers at my local Tops grocery in the bulk section.






For anytime, kids love sprinkles, m&m's, which now in every color imaginable. You can make professional impressive cupcakes for under 3 dollars to impress your friends and kids at school. Fill a pastry bag or you can buy kits that have a large star tip in them. Fill bag or decorator squeeze bottle, which I love and find them at Marshalls or TJ Maxx. So easy. large star tip start on edges or center and spiral around and around, ending in middle with an extra slight light touch star to stick up in the middle. They are so much fun to do, and even my son first time could do them, and looked great.






I also have a card making business, and this is my favorite time of year to create fall and Halloween themes.

Busy after a nice break from all business for a few weeks. Card orders to fill, and then really hit the bricks playing catch up making cards. I really goofed off this summer and behind. I look forward to more variation cards, baking, and I also make jewelry.

Rum Chocolate Chocolate Chip Cookies

Today I am trying a new chocolate chip recipe, Rum Chocolate Chip Cookies. How divine these are. Great hit with college students or anyone. SOmething you yearn and definitely get a craving and have to have. No one I know makes these. I also make an orange chocolate chip cookie with grated orange zest and fresh orange juice. I love these.
I am trying to devise more unique versions of the classic choclate chip cookie.
Please let me know if you have one you would like to share. Or even the concept or idea, if your recipe is a secret, which us bakers know is important sometimes.

Oh too, I am trying to make a blueberry cookie today. Will take pictures and show you this yummy sounding unique cookie if they are as good as they sound.

Cakepops

For a child's birthday it is great fun, and so easy to make cake pops. Kid's love to create themselves and so proud of their little treats. It makes a hit at a birthday.
An easy recipe for cake Pops: You don't need that cake pop pan. Just a vaiety of sprinkles for them to roll the cakepops in.

Dark chocolate cake mix (or any flavor box cake mix)
8 oz cream cheese
2 cups confectionary sugar.4 tablsps. butter

bake cake mix according to package directions, 9 by 13 inch pan, and bake. cool.
Break up cooled cake in a bowl.
In a separate bowl whip cream cheese confectionary sugar til smooth.
Pour into cake pieces broke up small. Place in refrigerator to get cold. When cold, roll into balls, place candy stick in bottom of each. Dip each in melted white or semi-sweet choc. chips to coat and then roll in sprinkles, decorator sugars, jimmies, nuts, coconut, etc.
have fun and they will love you for it. even a sat. afternoon or having a party the kid's love getting involved. Doesn't take long. You can stick in a stryofoam piece of use your own imagination to keep them upright. some people fill a bowl with granulated sugar.

Spice Things Up



Fall shortly upon us, just makes me want to bake everyday! I think of things in my mind constantly to create, looking for new ideas.



Some people love spicy things, and desserts are starting to incorporate that. I made this chocolate cupcake and added a tiny bit of crushed chil powder to batter. Added chocolate curls that was a spicy chili chocolate bar, the red sprinkles just to remember the spicy one. Some like it hot! Mine was mildy spicy, just a touch to know it was there.
